Enjoy our whole roasted 14-Day dry aged local Buddhist duck, appreciated in three fashions.
Once roasted, first we serve the breasts with crisp lettuce and an array of condiments. We encourage you to build your own lettuce wrap combinations such as sesame aioli and ginger, Japanese mustard and pickled daikon,
Then the remainder of the meat from the body and legs are scattered over fried rice with a umeboshi kabayaki (a barbeque sauce made from pickled plums) and served alongside tsukemono (house pickled vegetables).
Finish with Shirumono, our Bancha bone broth. To savour the last of the nutrition, this bone broth is steeped with Kyoto iribancha, a deeply roasted tea with a smokey essence.
